Set up and prepare the workstation with all required mise en place before each service. Prepare, cook, and present dishes according to established recipes and quality standards. Monitor stock levels, ensure proper food storage, and follow FIFO procedures. Maintain food safety, hygiene, sanitation, temperature control, and labeling standards. Minimize food waste and support cost-control initiatives. Report equipment issues, maintenance concerns, and food quality problems promptly. Support menu implementation, cross-training, and knowledge sharing with junior team members. Assist the Chef de Partie and assume responsibilities in their absence when required. Ensure compliance with hotel policies, grooming standards, and operational procedures. Work collaboratively with the kitchen team to deliver exceptional guest experiences.

Proven experience working in a steakhouse kitchen, preferably within a luxury hotel or premium dining establishment.

POSITION SUMMARY Prepare special meals or substitute items. Regulate temperature of ovens, broilers, grills, and roasters. Pull food from freezer storage to thaw in the refrigerator. Ensure proper portion, arrangement, and food garnish. Maintain food logs. Monitor the quality and quantity of food that is prepared. Communicate assistance needed during busy periods. Inform Chef of excess food items for use in daily specials. Inform Food & Beverage service staff of menu specials and out of stock menu items. Ensure the quality of the food items. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist. Prepare cold foods.
