About this role
JOB SUMMARY The Chief Steward is responsible for managing all stewarding and kitchen utility operations, including dishwashing, cleaning, back dock maintenance, and banquet support activities such as plating and food running. This role ensures the highest standards of cleanliness, sanitation, and operational efficiency across all kitchen and banquet support areas. The Chief Steward provides strong leadership to the stewarding team, supports banquet and culinary operations, and drives guest and employee satisfaction while maintaining budget control and compliance with brand and safety standards. KEY RESPONSIBILITIES 1. Operations Management
Oversee day-to-day stewarding operations including dish room, night cleaning, and back dock areas Support banquet functions with plating, food running, and equipment readiness Ensure adequate supply of clean china, glassware, silverware, and kitchen equipment Monitor inventory levels of cleaning supplies, chemicals, and operational equipment Conduct regular inspections to ensure cleanliness, hygiene, and safety standards Ensure all food transport and holding equipment are in proper working order
2. Leadership & Team Management
Lead, supervise, and motivate the stewarding team to ensure high performance Provide training, coaching, and ongoing development for associates Maintain team productivity and operational efficiency Promote teamwork, collaboration, and a positive work environment Act as a role model demonstrating professionalism and company values Recognize team contributions and encourage engagement
3. Guest Experience & Service Excellence
Support banquet and F&B operations to ensure smooth and efficient service delivery Maintain high hygiene and cleanliness standards to support guest satisfaction Collaborate with Culinary and F&B teams to meet service expectations Promote a culture of service excellence within the stewarding team
4. Compliance & Quality Assurance
Ensure strict compliance with food safety, sanitation, and hygiene standards Enforce proper cleaning procedures for equipment, floors, and service areas Ensure correct use, cleaning, and maintenance of dishwashing machinery Adhere to all company policies, brand standards, and local regulations Maintain safe working practices and support accident prevention initiatives
5. Human Resources & Talent Support
Supervise team performance and provide regular feedback and coaching Support recruitment, training, and development of stewarding associates Ensure proper training in chemical handling, sanitation, and equipment usage Promote employee engagement and maintain fair workplace practices Support HR processes, including disciplinary procedures where required
6. Financial & Administrative Management
Monitor and control inventory of equipment, supplies, and smallwares Support cost control initiatives and minimize waste and breakage Conduct regular inventory checks of china, glassware, and silver Support departmental budgeting and cost management efforts

QUALIFICATION AND EXPERIENCE
Diploma/Degree in Hospitality, Business Administration, or related field with 4 years of experience in stewarding, food & beverage, culinary, or related field Proven experience in stewarding or kitchen utility operations Strong leadership and team management skills Knowledge of food safety, sanitation, and hygiene standards Experience managing inventory, supplies, and equipment Strong problem-solving and
